Now that it’s autumn, you’d expect the weather to be cooling down and not 36oC outside!
For as long as the summer feeling lasts why not try a great non-alcoholic mocktail for those days without wine?
Crush a cup full of ice and place into a mixer.
Add 250ml approx of lychee juice (available as a sweetened ‘lychee drink’ from Asian grocers or most supermarkets).
Add the juice of half a lemon.
Add 150ml yoghurt (plain preferred - try b.-d Farm Paris Creek from the Adelaide Hills)
Add 50ml of orange or pineapple juice for colour.
Blend briefly and place in a long, highball glass.
Serve with straws, a slice of orange or a maraschino cherry depending on how girly you’re feeling.
With a base of crushed ice, yoghurt and a squeeze of lemon juice, you can try a whole range of variations based on whatever fruit juices you have to hand. Three measures each of orange and pineapple juice, with two measures yoghurt and a teaspoon or two of honey is another favourite.
Anything you like - but it goes particularly well with Indian foods with a bit of heat and spice.
